Pinot Gris, Alsace, FranceÂ
A brand new to Ontario, full bodied and food-craving Alsatian pinot gris. Mythical winemaker Jean-Marc Dreyer works his seven hectares of old vines (20-80 years old) fully organically and biodynamically, producing intricate & ageable cuvĂ©es across the board. Since 2004, JM has been developing an expansive fanbase that covers everyone from natural wine newbies and lovers, to other legendary makers, Lapins Des Vignes being #1, the next being you! The âOriginâ lineup consists exclusively of single-grape expressions, grown mainly on clay-limestone, with wild grasses allowed to grow and engross the crop. This zesty, pinot gris sees seven days of maceration, and is aged for 9-11 months in old wood, melding creamy and sharp characteristics seamlessly. The colour of an amber encased dragonfly, lemons under a pile of leaves, tobacco stem tannins, fleshy white fruit, edible grass, an umami sigh of relief & a canteen of ragged minerality like spider hairs latching to your tongue.
