You might remember Vidal as the grape used to make sticky-sweet icewine, but itâs so much more than that â a hybrid grape thatâs naturally resistant to pests and fungi, with the added benefit of being hardy enough to endure our ever-changing climate. Plus, when fermented to total dryness, it reveals a softer, more floral side, all orange zest and blossom with a luscious tinge of texture. Macerated for 10 days in tank and aged in neutral French oak, itâs giving key lime pie and orange wedge smile with a side of camellia and rubbed mint. Lean all the way in and serve with citrus-marinated olives & spicy-sweet pecans.
