A brand NEW, Nordic and nuanced zero-zero red blend from a Quebec fave. Pinard & Filles winemakers Catherine Belanger and Frederic Simon organically farm 2.2 hectares of land, where they fully embrace experimentation, minimal-intervention & simply great wines. They are famed for their ability to lift the less appreciated, hybrid grapes up to their deserved regal, cold-climate pedestal. âBleu Nuitâ is composed for the first time of green, berried dornfelder (70%) from their baby 12-year-old vines, co-fermented with young spiced nâ tart blaufrankish (30%) grown on shale. The grapes all see 10-days on skins in stainless steel tank with light foot crushing, followed by a one year aging in barrels growing up a bit. A round nose-full nordic berries, lichen encrusted rock, salt spray, twigs, twine & a light salmonberry throughout. Enjoy with antelope, buffalo or rabbit terrines, mayyybe a shaved truffle or two to really kick your Quebecois-ness into HIGH GEAR.Â
