The sibling of ‘Jonas’, ‘Bábel’ is Szigel Pince’s other village blend, someplace in between a rosé and a light red. Located about two hours south of Budapest, winemakers Petra and Balázs are two oenologists/viticulturists working with organic farming practices & minimal intervention cellar work. A blend of tannic and peppery kékfrankos (blaufränkisch), fragrant rotburger & carbonically macerated and vibrant kadarka. From 8-10 harvests taking place at different times, the grapes are pressed and the musts are poured one on top of the other and fermented in a sort of tower, like a tiered cake of squished, grapey goodness. Loaded with florals, raspberry tornado, lime juice, black pepper, anise & a caress of smokiness. Pour alongside elk sausages & learning to light a fire without a match.
