A weighty, elegant and zero-zero Austrian sauv blanc from masterful hands. Available for the first time in Ontario, welcome to the stunning wines of Maria & Sepp Muster! Maris and Sepp took over the Schlossberg estate (with a history traceable back to 1727!) from Sepp’s father in 2000. These famous 10 hectares of certified organic and biodynamic vineyards are composed of rolling slopes held together by OLD vines. FUN FACT! “Graf” has an association with centre, or second tier, as the vineyard lies geographically between the higher located Sgaminegg and the slightly lower ‘Opok’ parcels! This mid-tier has more sun intensity than the Opok, while keeping more freshness than the highest elevation plots - the best of both worlds. Slowly pressed over four hours, and aged for 24 months to metamorphose, this sauv is unlike many you’ve tasted. Crack in a cave wall, green bitters, chalk, tonka bean, churning butter, silk, pearls in 90’s fashion & a realm of plushness we want to live inside. Enjoy with butter chicken (Murgh Makhani) roti.
