Spiced and SLURPABLE Itata orange, in Ontario for the very first time! Working in wine for over 15 years, Pino Román (aka NACHO) founded his project in 2018, to serve up utterly delicious expressions of the local grape-growing community that have existed for over 475 years (!). Nacho feels that the Chilean variety of semillón is far enough from Australian or French expressions that it probably deserves its own name! What would you name it? Hand plucked from own-rooted bush vines on decomposed granite soils, grapes are granted room to shine their citrus pith light (don’t look up!). A blend of crystalline, free-run and macerated (7-15 days) juice, laid to rest partially in neutral French oak for six months to round, like buffing the scratches out of a vintage side table. Turmeric, saffron, herbs in plastic pack, cactus water, bark n’ twigs, daffodils, padron pepper & musk melon. Enjoy with sag paneer!
