'Spolu'

A playful, spiced and juicy red-white blend that can’t be boxed in. Charismatic and multi-talented winemakers and partners, Nadja and Andrej, perform everything from farming to fermenting entirely on their own for this passionate project. The importance for them lies in having a sincere connection to the land, while maintaining a non-intervention process, and keeping everything close to home - even aging is done in the cellar beneath their house (built in the 1600s!). ‘Spolu' means "together", as for this cuvée they combined white and red grapes, including deeply fruited and spiced blaufränkisch, herbaceous grüner veltliner, and tree-fruited riesling, that see a mix of semi-carbonic fermentation and direct pressing, before one year in barrel tp come into its own. Sour cherry meets pomegranate juice, hibiscus a plenty, while a shot of tabasco & sage salt tug at the fruity core. Enjoy while re-watching Glee for the first time since high school, oh the joys of a capella that await!
