Winemaker David Eiberg is situated in the emerging wine-growing region of Creemore Hills, Ontario and has been blowing us away with his delicious and expressive offerings. This 60/40 skin-contact, co-ferment of Pinot Gris and Riesling is no exception. As an added environmental bonus, these vines grow in rich clay soil that allows Therianthropy to use âdry-farmingâ aka, no watering necessary! All of the delicious, vitamin-rich fruit, with little-to-no intervention. âMouflonâ is rested in concrete with skins and stems for six months producing all the texture and this stunning colour â sewing together a rounded tannin textile of purple shiso leaf, fennel fronds, pithy pomelo juice & a subtle apricot nectar jam. This wine makes us want to eat campfire-cooked French toast for dinner, while the lapping of a secluded Muskoka lake keeps tempo in the background.
