Stop on by for a slice of LOVE! Natural wine icons Philippe and Catherine started their now much beloved domaine in 1997 in northern Beaujolaisâs Chasselas region. Together they work their 3.5 hectares with a tender touch, fermenting zero-zero wines of vigour, tension & age-ability â and here for the first time in Ontario! Devastatingly, their vineyards were hit by such vigorous hail two years in a row that most of the harvest was lost. As a result, they started this project, working with local farmerâs fruit and fermenting it in the Jambon style. Fruit by the foot, mushroom perfume, salt preserved raspberry, pink peppercorn, lingonberry acidity duelling it out with persimmon tannins. Enjoy with a heaping pile of black pudding.
