Un Pas de CotĂ©â
Grenache Noir, Languedoc-Roussillon, France
A thick nâ juicy, legendary southern grenache in Ontario for the very first time! Axel PrĂŒfer, originally from east Germany, found his way to southern France many moons ago and spent time working with celebrated winemakers (think Jean François Nicq of Les Foulards Rouges and Eric Pfifferling of LâAnglore) before forming his domaine, Le Temps des Cerises, in 2003. He farms and completes cellar work with little or no intervention in the majestically undulating La Tour-sur-Orb, of southern France's Orb River Valley. âUn Pas de CotĂ©â or âa step asideâ, is 100% old vine, spiced and aromatic grenache noir on limestone. Grapes see a three week carbonic maceration prior to pressing, making for a denser than previous vintages expression, that rings with a seemingly never-ending echo of aromatics. Strawberries steeped in green blueberry juice, chalk and ash, dry, twiggy scrubland tannic structure & an omnipresent minerality. Enjoy with a meat stick on your fave local stoop, the last of the season lilacs crisping by your side.Â
