'Il Rosé and the Beast'

A floral, citric peeled and lively Piemonte rosé pet-nat available in Ontario of the very first time! Valli Unite has been an organic co-operative in Piemonte since 1981, growing and producing EVERYTHING themselves, from wine, to honey, to salumi. Today, their winery is powered with solar energy and their vineyards and wines are minimally intervened with, all in the name of letting the land speak for itself. FUN FACT! The vines are still monitored for fungi and insect populations, and treated with non-harmful substances like orange extracts, copper and bee propolis (from their bees) when necessary! ‘Rosé & the Beast’ is the latest addition to the sparkling ‘Beast’ line of offerings, made of herbal, stone fruity cortese, tropical, floral malvasia and tart, earthy barbera. The first fermentation is done in steel tanks with direct pressed juice, and the second, re-fermentation happens in the bottle with the addition of must (grape skins n’ bits that includes yeast and sugar). Currant flowers, wooden backgammon board, dried floral arrangements, a chalky, rockets candy texture, leather belt, chunky satsuma rind, diamond necklace & a batting eyelash of liquorice. Enjoy alongside herby, saucy noodle dishes.
