Hybrid-heroes Pinard & Filles, aka Catherine Belanger and Frederic Simon, organically farm a tiny 2.2 hectare area and fully embrace experimentation & a minimal-intervention mindset. The vinous marriage consists of vinifera grapes and hybrids, including the muscat-reminiscent la crescent (hybrid) seeing a 90-day maceration (50%), with tart, driving riesling (vinifera), concentrated, full-bodied hibernal (hybrid), tropical brianna (hybrid) and some more la crescent all direct press (50%). Mandarin koolaid, good sunscreen, tropical potpourri & a sticky tannin finish line is cut by snippy acid scissors. Pour alongside your favourite summer pea dish you seasonal produce fiend you!
