A trip to another world. Udo Hirsch and Hacer Özkaya have a longterm involvement with the natural world and its conservation; Udo with his ecological work alongside the World Wildlife Fund & Hacer with her teaching of ceramics and garden cultivation. It is no surprise that when they purchased a 250 year old home in western Cappadocia (complete with an ancient wine cellar), they ventured into winemaking. Made from 200+ year old, ungrafted kalecik özkaya vines (some of the last in existence with its original rootstock) surviving heartily on volcanic soils. FUN FACT! Turkey has one of the most genetically diverse plantings of grapes in the world. Kalecik özkaya is the only red grape they use at the winery, known for bodacious fruit-forwardness and low tannin concentration. Fermented in kĆ«ps (amphora) for seven-nine months, with an additional nine months of aging as they ease into unison. Intense salinity, like inhaling a wave accidentally, smoking Earth, bountiful candied cherries, an all around pastoral glory of sinking wood fences & stone ruins.
