A brusk, bashful and classically beautiful premier Champagne for one and all. Georges Laval is a tiny estate that has been organic since 1971, located in the 1er Cru village of Cumières, close to Grand Cru village Bouzy, and where fourth generation winemaker Vincent Laval makes a truly miniscule amount of honest, expressive Champagnes. FUN FACT! Organic compost is used, and cover crops are planted in all of the plots, with regular tilling to oxygenate the soil and encourage the roots to descend deeper! ’Cumieres 1er Cru’ is a perfectly unison blend of 50% crisp, mineral chardonnay, 30% earthy, floral pinot noir and 20% spiced, fruit pinot meunier. Wildflower honey on toasted brioche, mowed lawn, salty umeboshi, candied ginseng, raw walnuts, lemon rind, mustard greens, apple slices & an unmatched chalky minerality. Pour alongside a whole roasted suckling pig and underground-fire-cooked gourds.
