A smoky, savoury and earthy sake for reconnecting to the animal within. Fresh to our market from sake professional Mariko’s Tajir new import agency Kyabetsu Imports! Established in 1907, Tsuchida Sake Brewery is situated in Kawaba, a small village of 3,100 people in Gunma Prefecture, a mountainous region northwest of Tokyo. The brewery says, ā€œwe attempt to utilize old and new wisdom, and carry on our knowledge and skills to the next generationā€. Made with Sasashigure (a table) rice polished to 90% (barely polished) and made in the ancient kimoto method with shochu yellow koji. FUN FACT! The table rice is farmed organically without the use of any chemicals! The rice is then aged in OLD cedar barrels, a BIG flex as there is literally one man, and two apprentices, that currently make them! Plushy savouriness, toasty hickory sticks with white dragonfruit underneath, mirin, white chocolate cake & in a log cabin. Mariko suggests enjoying with duck meatballs stuffed with foie gras.Ā
