A punchy, prickly and poised zero-zero pinot noir rosĂ© from a need-to-know producer. Richard StĂĄvek has been a leader in natural winemaking and environment conscious agriculture since the mid-90s. He and his wife Stanislava's 15 hectares of land in South Moravia are home to vineyards, cherries, walnuts, vegetables, sea buckthorn bushes, apricots and their wood for furniture production, berries for brandy, beehives for honey and wax for bottles, animal life including goats for cheese (stop us we’re DROOOLING!), and other crops that all play their part in the biodiversity symphony they’ve cultivated. ‘PNc’ is a rosĂ© made with pinot noir grown on clay and loess soils that is picked by hand, direct pressed for minimal colour and tannin extraction and aged in 300-litre acacia barrels to soften. Red currants and their flowers, pickled lemons, a tussle in the hay, careening minerality flows into sweet spice that never dissipates & a glistening umami fringe that is quite unforgettable. Enjoy with warm lentil and bulgar salad and perusing Pascaline Lepeltier’s ‘One Thousand Vines’.
