A complex, textural and savoury zero-zero exploration of the white grapes of Czech Republic. Richard StĂĄvek has been a leader in natural winemaking and environment conscious agriculture since the mid-90s. He and his wife Stanislava's 15 hectares of land in South Moravia are home to vineyards, cherries, walnuts, vegetables, sea buckthorn bushes, and apricots. It also includes wood they use furniture production, berries for brandy, beehives for honey and wax for bottles, with animal life including goats for cheese (stop us weâre DROOOLING!), and other crops that all play their part in the biodiversity symphony theyâve cultivated. âVeselyâ is a field blend of white grapes from 50-year-old old vines, including herbaceous grĂźner veltliner, rich malvasia, floral mĂźller-thurgau, spiced neuburger, peachy pinot blanc, tropical traminer and tart welschriesling. Dandelion tea, flowering herbs, bruised apple meeting preserved nâ spiced apricots in their own juices, tree bark, crushed lemons & burrowing deep into the Earth kinda warm musk. Pair with The Art of Eating by M.F.K. Fisher.Â
